Culinary Corfu

As with any other cultural aspect, the food on Corfu reflects the tumultuous successions of foreign rule on the island.

The typical ingredients are fish, lamb, lemons, olives, tomatos, pasta and feta cheese. Quite frequently all of the latter will be found arbitrarily mixed together. That said, most dishes are of a typically Greek style, such as Moussaka, Dolriades or Souvlaki.

Spices are generally used with moderation as is usually the case in the mediterranean area. Thus many dishes are prepared with mint, garlic, onions, basil, parsley and dill.

When it comes to beverages, the Corfiots are Greek through and through: No dish should be served without the obligatory wine and ouzo.
